Pizzelles are an Old World traditional
Italian waffle cookie. It is believed they were first developed
in a central region of Italy during ancient times in honor of an
annual celebration. Eventually, pizzelles were used to celebrate
any holiday or festive occasion, especially Christmas and Easter.
Early pizzelles were embossed with the family crest or some symbol
of the local village. They were baked individually with irons held
over an open fire. Irons similar to those can still be purchased
for use over your kitchen range.
Today, pizzelles usually have a waffle pattern on one side and
a floral pattern on the other. Traditional pizzelles are not overly
sweet and are flavored with anise, giving them a licorice flavor.
